Healthy Breakfast Muffins

These healthy muffins are perfect for breakfast, or any time of day! They are made with whole wheat flour, less sugar, and less butter, but they are still super moist and fluffy!

Ingredients

  • 4 tablespoons unsalted butter melted
  • 2 tablespoons olive oil or vegetable oil
  • 1/3 cup granulated sugar
  • 2 eggs preferably room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup yogurt or substitute buttermilk, sour cream, or milk
  • 2/3 cup milk preferably room temperature
  • 2/3 cup applesauce see notes for substitutes
  • 1 cup whole wheat flour or substitute all purpose flour
  • 1 1/4 cups all purpose flour
  • 2 teaspoons baking powder
  • 3/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 cup dried fruit, chopped if large optional
  • 1/2 cup nuts, chopped optional

Instructions

  • Preheat oven to 375ยบ F. Line a standard 12-cup muffin pan with paper liners or grease well.
  • In a large bowl, whisk the butter, oil, and sugar together. Add the eggs, vanilla extract, and yogurt. Whisk until well combined. Add the milk and applesauce and whisk until incorporated. The applesauce will not completely mix into the wet ingredients - just make sure it's dispersed.
  • In a separate bowl, whisk the whole wheat flour, all purpose flour, baking powder, baking soda, and salt until well combined. Dump the dry ingredients into the wet ingredients and stir gently until just combined. Add the dried fruit, nuts, and any other mix-ins and fold until incorporated. Be careful not to over mix!
  • Spoon the batter evenly into the prepared muffin pan. It's ok if the muffin cups are full.
  • Bake the muffins in the preheated oven for 18-22 minutes, or until they are golden on top, and an inserted toothpick comes out clean. Remove from oven and allow the muffins to rest in the pan for 5 minutes. Then transfer the muffins to a wire rack to finish cooling.
  • Enjoy warm! To reheat, simply microwave a muffin for 20-30 seconds.

Notes

Instead of applesauce, you can substitute pumpkin puree, pureed pear, or plain Greek yogurt.
For extra plump dried fruit, try soaking them in warm water or juice overnight.
These muffins are super customizable! Try adding your favorite extract like almond extract, orange extract, or coconut extract. Or, add some fresh fruit and citrus zest. Consider adding your favorite spices like cinnamon or nutmeg!
Instead of dried fruit and nuts, try adding whatever mix-ins you would like! For instance, fresh fruit, chocolate chips, or rolled oats.
