This mug peach cobbler is so fluffy and delicious and comes together completely in the microwave. It’s the perfect summer dessert for when you suddenly get a craving after dinner. It’s made with fresh peaches that get cooked down to a thick, bubbly mixture in the microwave.

Tips:

The mug you choose should be large because the juices in the peaches will start to bubble and if your mug is too small, the juices will bubble over. Think about a mug that’s close to a small bowl, in fact, you could actually use a small-medium bowl.

Since we’re microwaving the peaches and not baking them, it’s important that the peaches are cut into very small pieces so that they can cook faster. This is another reason why the peaches are microwaved first without the topping so that they can get a head start on cooking.

Also, microwaves can vary greatly with their power so the times in this recipe are more like a starting place. You may have to add more time depending on your own microwave.

Mug Peach Cobbler

Ingredients

For the peach mixture:

  • 2 medium peaches, diced into small pieces
  • 2 teaspoons granulated sugar
  • pinch of salt, optional
  • dash of cinnamon

For the topping:

  • 3 tablespoons whole wheat flour, or sub all purpose flour
  • 2 teaspoons granulated sugar
  • 1/4 teaspoon baking powder
  • 3/4 tablespoon cold butter, cut into small pieces
  • 1 tablespoon milk
  • 1/8 teaspoon vanilla extract

Preparation

  1. Add the diced peaches, 2 teaspoons granulated sugar, salt, and cinnamon to a large mug and microwave for 45 seconds. Then stir and microwave for another 45 seconds. Set aside.
  2. In a small bowl, combine the flour, 2 teaspoons granulated sugar, and baking powder. Then add the butter and use a fork or your hands to form a mixture with sand-like consistency. Then add the milk and vanilla extract and stir everything together.
  3. Add the topping mixture in an even layer on top of the peaches and microwave for 60 seconds. If the topping still looks wet, microwave for another 20 seconds.
  4. Let cool briefly and enjoy!
