Tips:

The dough is super simple to make but it’s important to knead it so that it can develop some gluten. Without the gluten, the dough could just tear when you wrap it around your s’more ingredients. The gluten also adds to the chewiness!

It’s also important to rest the dough briefly after you knead it so that it can relax. This will make it much easier to work with when you roll it out and wrap it around the s’more ingredients.

When I am wrapping my s’mores, I like to place the ingredients in the center of the dough circle and then fold up the opposite edges first. Then I pinch them shut and I bring in the 4 corners and pinch them in too.

Airfryer S’mores Bites

Prep time: 35 minutes Cook time: 8 minutes Servings: 10-12 bites

Ingredients

  • 1 3/4 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 tablespoons melted butter
  • 2/3 cup milk
  • 4-6 graham crackers
  • 12 large marshmallows
  • 8 ounces chocolate bar of choice

Note: you may not use all of the graham crackers, marshmallows, and chocolate

Preparation

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar. Then add the melted butter and milk and stir together using a spatula or spoon. When a shaggy dough forms, knead with your hands for at least 2 minutes. Then let the dough rest for 10 minutes before using.
  2. Preheat the airfryer at 370º F. Once rested, dump the dough onto a lightly floured surface and use a rolling pin to roll until it is 1/8 inch thick. Then use a 3 1/2 or 4 inch circle cutter to cut the dough out. Alternatively, you could break off a piece of dough, around 3 tablespoons, and form it into a ball before rolling it out until it is a circle and 1/8 inch thick.
  3. In the center of the dough circle, add a small piece of graham cracker that is a little larger than your marshmallow. Then add the marshmallow and top with a piece of chocolate around the same size. Fold up the opposite edges of the dough circle so that they meet in the middle over the chocolate. Repeat with the other edges. Pinch all of the edges together tightly so that it wraps around the entire s’more. Repeat until all of the dough is used.
  4. Line the airfryer basket with parchment paper and place the s’more bites seam side down in a single layer. Make sure to leave some room for them to expand. You may have to bake the s’mores bites in multiple batches. Bake for 8 minutes at 370º F. Once done baking, they should be golden brown and puffed. Let them cool briefly before enjoying!
