Chickpea Chocolate Chip Cookie Dough Truffles

These chickpea cookie dough truffles are smooth and creamy with a perfect crunch from the chocolate chips. The chickpeas add fiber and protein to keep you energized and satisfied!

Ingredients

  • 1 1/2 cups canned chickpeas from 1 15 oz can, drained and rinsed well
  • 1/8 teaspoon salt
  • 2 teaspoons vanilla extract
  • 3-5 tablespoons brown sugar to taste
  • 1/4 cup oat flour see notes for substitutes
  • 1/3 cup semi-sweet chocolate chips
  • 2-3 tablespoons cocoa powder for dusting on top

Instructions

  • Add chickpeas, salt, vanilla, brown sugar, and oat flour to a food processor or blender. Process until very smooth. You may need to stop and scrape down the sides of the processor a few times. Transfer the mixture to a separate bowl and mix in the chocolate chips. Refrigerate for at least 3 hours.
  • Divide the dough into into 12 equal portions and roll into balls. Dust with cocoa powder. Enjoy! Any leftovers can be stored in an airtight container in the refrigerator.

Notes

Instead of oat flour, you can substitute heat treated all purpose flour or heat treated whole wheat flour. You can also make oat flour by blending 1/4 rolled oats in a strong blender.
