Because these truffles are made with chickpeas and very little flour, they aren’t as chewy or dense as traditional cookie dough. They are more creamy and soft.

- Chickpeas (cooked): I prefer using canned chickpeas for convenience, but you could also use chickpeas that you have cooked yourself. Make sure to rinse the chickpeas very well before using them to remove salt from the canning liquid.
- Brown sugar: Brown sugar helps to sweeten these truffles and adds a classic chocolate chip cookie flavor. If you don’t have brown sugar, you can use 3 tablespoons granulated sugar and 1/2 teaspoon molasses.
- Oat flour: Store-bought or homemade oat flour will both work. For homemade oat flour, simply blend 1/4 cup rolled oats in a strong blender.
- Chocolate chips: I recommend using dark or semisweet chocolate chips. Mini chocolate chips would also be great!

*A note about flour:
All purpose flour and whole wheat flour are NOT safe to consume raw because they may contain salmonella. To avoid heat-treating flour, this recipe calls for oat flour. However, all purpose or whole wheat flour may be substituted for the oat flour, just make sure to heat treat-it first!

- Homemade oat flour: If you don’t have oat flour, you can quickly make your own by blending 1/4 cup dry rolled oats. You can also substitute all purpose or whole wheat flour as long as you heat treat it first.
Variations and ingredient substitutions
- Different beans: These truffles can also be made with white beans or black beans.
- Brown sugar alternatives: Instead of brown sugar, you can substitute 3 tablespoons granulated sugar and 1/2 teaspoon molasses. You can also substitute 3-5 tablespoons maple syrup and add an additional 2 tablespoons of oat flour to account for the extra liquid.
- Oat flour alternatives: If you don’t have oat flour, you can quickly make your own by blending 1/4 cup dry rolled oats. You can also substitute all purpose or whole wheat flour as long as you heat treat it first.
- Chocolate chip alternatives: I love using dark or semisweet chocolate chips in these truffles, but they would also taste great with dried fruit or chopped nuts. Instead of chocolate chips, you can also use a chopped chocolate bar.

Chickpea Chocolate Chip Cookie Dough Truffles
Ingredients
- 1 1/2 cups canned chickpeas from 1 15 oz can, drained and rinsed well
- 1/8 teaspoon salt
- 2 teaspoons vanilla extract
- 3-5 tablespoons brown sugar to taste
- 1/4 cup oat flour see notes for substitutes
- 1/3 cup semi-sweet chocolate chips
- 2-3 tablespoons cocoa powder for dusting on top
Instructions
- Add chickpeas, salt, vanilla, brown sugar, and oat flour to a food processor or blender. Process until very smooth. You may need to stop and scrape down the sides of the processor a few times. Transfer the mixture to a separate bowl and mix in the chocolate chips. Refrigerate for at least 3 hours.
- Divide the dough into into 12 equal portions and roll into balls. Dust with cocoa powder. Enjoy! Any leftovers can be stored in an airtight container in the refrigerator.
