These airfryer blueberry pie bites are made with a microwave pie filling and bake in just 10 minutes. Traditional blueberry pie filling is reduced on the stove but for this recipe, the filling is made in the airfryer in just 5 minutes. This saves time and it’s one less pot to wash! The actual pie dough comes together in a food processor (but I also have instructions if you don’t have a food processor). It’s like a little pie explosion in your mouth every time you bite into one!
Tips:
- The pie dough comes together in a food processor but if you don’t have one, you can still make these! All you have to do is whisk together all the dry ingredients in a bowl and then cut in the butter with a pastry cutter, fork, or your fingers!
- It’s really important to keep the butter and the entire pie dough cold. That’s why this recipe calls for ice water. Try to handle the dough as little as possible and when your not using it, keep it in the fridge.
- The blueberry pie filling is made in the microwave but everyone’s microwaves are a little different so the time it takes can range from 4 – 6 minutes.
- Make sure the filling is completely cooled before using it or else it could melt the butter in the dough.

Blueberry Pie Bites
Prep time: 25 minutes Cook time: 10 minutes Servings: 10-12 pie bites
Ingredients
For the blueberry pie filling:
- 2 cups fresh blueberries
- 2 tablespoons cornstarch
- 3 tablespoons granulated sugar
- 1 teaspoon lemon juice, optional
For the pie dough:
- 2 cups all purpose flour
- 1/4 teaspoon salt
- 3/4 teaspoon baking powder
- 2 tablespoons granulated sugar
- 10 tablespoons butter, cold and cubed
- 1/4 teaspoon vanilla extract
- 5 tablespoons ice water
Preparation
- Make the blueberry filling: In a large bowl, mash the blueberries with the back of a fork, spoon, or potato masher. Then stir in the cornstarch, sugar, and lemon juice. Microwave uncovered for 4 minutes then check the consistency. It should be a thick mixture that will coat the back of a spoon. It should be thicker than traditional pie filling since there is no pie tin to contain it. If the mixture is too liquidy, stir and microwave for another minute and repeat until it reaches the right consistency. Set aside to cool.
- Make the pie dough: Add the flour, salt, baking powder, and sugar to a food processor and mix together (see above in the post for instructions without a food processor). Then add the cubed butter to the processor and pulse until it reaches a sandy texture. Add the vanilla extract and ice water to the processor and pulse until a dough forms. Use your hands to make the dough into one ball and cover in plastic wrap. Let the dough rest in the fridge for at least 45 minutes.
- Once chilled, transfer the dough to a lightly floured surface and roll into a sheet that is 1/4 inch thick. Use a knife to cut the dough into 3×3 inch squares. To assemble the blueberry pie bites, add a small spoon (around 1 1/2 teaspoons) of the blueberry filling to the center of a square. Then use a knife to cut two small slits in another square, these will act as vents so the steam can escape while baking. Put the square with the vents on top of the square with the filling. Then press down firmly all around the edges to seal the two squares together. Once sealed, press a fork around the edge of the squares to crimp. Repeat until all of the dough is used
- When ready to bake, line the basket of an air fryer with parchment paper and transfer the pie bites into the basket in a single layer. Make sure to leave some room in between for them to expand. You may have to bake 2 – 3 batches. Air fry for 10 minutes at 400º F. They should be golden brown on top. Once done air frying, transfer the pie bites to a wire rack to cool slightly before enjoying.
